I started adding pineapple as a way to tenderize older chanterelle mushrooms and the flavor of the two together was phenomenal !
3 cups chanterelle tops cleaned and dried
1 can chunk pineapple
Pasta sauce (optional)
This is such an easy recipe ! Place the chanterelle tops in a medium saucepan
Add the canned pineapple , including the juice
If you like you can turn it into a pasta sauce ! I like prego so i will sometimes add a jar of that to the pot also
Simmer for 20 to 30 minutes stirring frequently
Enjoy ! This is a great way to tenderize just about any older , tougher wild mushrooms .
