This concept was, again, born of a need to bring a new dish to a Mycophagy program that would travel easily. The idea of substituting Lions Mane for seafood didn’t seem far fetched. The reviews were excellent.
Recipe
Ingredients
1lb Hericium, cleaned
1 lb Medium Shell Pasta
1 Tsp minced garlic
1 Cup Celery, chopped
1/2 green pepper, chopped
1/2 red bell pepper, chopped
1/2 Cup green onion, chopped
1/2 Cup black olives, sliced
1/4 Cup Parmesan cheese, grated
1/2 Tsp Cajun seasonings
1 Tsp old bay seasoning
1 Tbsp parsley, minced
1 sprig Thyme , minced
1 small shallot, minced
1 Tbsp EVO
1/4 Cup lemon juice
2 Tbsp yellow mustard
1 Cup Mayonnaise
Salt & pepper
Instructions
Cook pasta in salted water per instructions and drain
Tear Hericium into bite sized pieces and sauté in EVO, shallot and Thyme
until mushroom is golden
Set aside
Whisk lemon juice, mustard, mayonnaise, Cajun seasoning, old bay seasoning & parsley together
Mix remaining ingredients with pasta
in large bowl
Add Hericium mixture & toss
Gradually toss lemon mustard dressing into pasta
Salt & pepper to taste
Refrigerate 2 hours or overnight and serve chilled as a side dish or a main salad.
