Oyster mushrooms are often plentiful in the fall growing on hardwoods. This was first used as an appetizer on slices of baguette for a NEMF Mycophagy program but pairs well with a white fish
Recipe
Ingredients
1 lb filet white fish
6 TBSP Butter, divided
1/2 Cup breadcrumbs seasoned w/
1/2 Tsp parsley
1/4 Tsp oregano
1/4 Tsp basil
3/4 Cup Grated Parmesan cheese
4 large garlic cloves, peeled & pressed
1 small shallot, minced
1/2 cup milk
3 Cups fresh spinach
1/2 Cup fresh, chopped parsley
1/2 Lb fresh oyster mushrooms
Instructions
Preheat oven to 350
Melt 1TBSP butter low heat
Combine bread crumbs & Parmesan
Add 1 TBSP butter and
Spinach to wilt 1-2 minutes
Stir in parsley
Add 1TBSP butter
Sauté shallot &
Mushrooms
Remove from heat
Dip fish in milk and
Roll in breadcrumbs with Parmesan cheese & spices
Place on foil covered cookie sheet
Melt 1/2 cup butter &
Garlic in sauce pan
Pour over fish and bake on a bed of the spinach mixture 12-15 minutes
