Provenance of Dish
One day looking for edible mushrooms. having no luck, I found a fairy ring of Macrolepiota. Together with one or two side dishes one mushroom is a meal in itself. I removed a mushroom without disturbing the fairy ring. Not really sure what to do with I decided I ask some Facebook friends from a mushroom group who said: schnitzel! I wanted no complicated recipes and decided to use no more than old bread and eggs...

Recipe
Ingredients
A large macrolepiota procera with an open hat
2 Eggs
Breadcrumbs with salt/pepper (and/or herbs as preferred)
Butter or oil
Instructions
Pick or cut a Macrolepiota procera and make sure it has all the characteristics, like a large open hat, tiger print on the stem and a moving ring on the stem.
In the kitchen remove the stem and use the hat.
Cut the hat in half and flatten it out.
Crack the eggs in a deep plate.
Put the breadcrumbs in the other deep plate.
Put the two pieces of Macrolepiota in the eggs and cover them on both sides.
Then cover the pieces in breadcrumbs.
Heat butter or oil in a pan and bake the schnitzels gold brown on both sides.
