Provenance of Dish
I were traveling with my dad, when we stopped to eat a smoked chicken, in a place that also smoked cheese also... this was a Smoked provolone, the place had a great small and the chicken was so great that we decided to buy a smoked cheese.
We are Oyster Mushroom producers in Guealea - Ecuador, and we have been trying different dishes to show the awesomeness of this food, in Quito this awesome food, so one day I meet with my cousin to try different dishes and we made the first entry with a toasted bun with red cabbage, smoked provolone cheese and Grey Oyster Mushrooms that that we would later use them for a spaghetti.
This time I want to tell you about the mushroom tartlets, cabbage and smoked cheese.

Ingredients
250 Gr Grey Oyster Mushroom
1 Baguette
1/4 purple cabbage
1/2 pound smoked cheese
1/2 lemon
1 Garlic
1/4 Onion
Prasley
1 spoon of mustard or other dressing

Instructions
Before including the bread in the oven, we must fry the onion and garlic in the butter, (if you want to add sausages this is the moment) when they are golden add the Mushrooms, salt and pepper let them cook for about 10 minutes and meanwhile prepare the bread,
Brown the bread in the oven and then add the purple cabbage with a bit mustard (or another dressing that you like) add the cooked mushrooms and grated cheese, cook them in the oven at 200 C for 5 min or when the cheese is gratin, the ad the parsley and please Enjoy!
