After a long winter, the Spring needs to be celebrated with dishes of the local foraged and fished fabulous food
Recipe
Ingredients
1 lb trout fillets
1 Cup yellow Morels
2 TBSP EVO
1/2 Cup dry white wine
2 1/2 Cups Wild Ramps
1/2 Tbs grated Parmesan cheese
Instructions
Reserve 1/2 Cup Washed ramps
Put remaining ramps in blender w/
1 TBSP EVO and
Parmesan cheese
Blend well; set aside
Heat oven to 350
Sauté cleaned morels in
1 TBSP EVO &
Remaining ramps, chopped
Put fish in greased baking dish
Pour wine atop
Bake 10 minutes
Remove from oven
Spread ramp pesto over fish
Pour morels over fish
Return to oven for 7 minutes
Serve and enjoy
