I kinda of made up this recipe because I love mushrooms!
Recipe
Ingredients
2 Tablespoons of salted butter
1/3 cup finely chopped onions
4 small sized shitaki mushrooms
1 clove finely chopped garlic
1 heaping teaspoon for finely chopped dill
3 Tablespoons of a good olive oil
8 ounce package of full fat cream cheese
1/4 cup of grated Parmesan cheese
Half cup of squeezed, cooked frozen spinach (optional)
12 baby bella mushrooms
One cup of good dry white wine (sweet if you prefer)

Instructions
Preheat oven to 400 degrees
Clean and remove stems from shiitake mushrooms
Set aside 2 Tablespoons of oil
Cut shiitakes in small pieces
Clean Baby Bellas and cut stems in small pieces
Place cleaned, cut shiitakes in a medium pan with Bella stems add 1 tablespoon of water
After shitakiis get a little cooked, add 1 Tablespoon of the oil and
2 Tablespoons of the butter and cook 1-2 minutes
Take cooked mushroom out and place on a plate
Using the fat from the pan the mushrooms were in,
cook the onions until wilted
Add mushrooms back to pan, add cream cheese and grated
cheese to that pan which is on low-stir and heat till creamy
Add dill, grated cheese, and S&P to taste
Turn off heat and leave
Clean the baby bellas and place them on a rimmed shallow pan
Stuff with the mixture
Brush each mushroom with the remaining oil
Put the cup of wine in the bottom of the pan so it streams into the mushrooms
Cook for 15-25 minutes until they are slightly brown
If you notice the pan is dry add more wine or water
