Provenance of Dish
I adapted this dish from a BuzzFeed ‘Tasty’ recipe. This is a delicious savory dish that is wonderful with any fresh mushroom, but especially edible Agaricus mushrooms. I like to use 'mixed mushroom' boxes from my grocery store for this recipe. I’ve substituted the shallots with white onion, and almond milk with cow’s milk. These substitutions work well.

Ingredients
1 medium cauliflower, chopped
3+1 tablespoons garlic butter
2 tablespoons almond milk
1/3 cup Romano cheese, grated
2+1 tablespoons olive oil
½ cup dry vermouth
2 shallots, finely chopped
3 sprigs fresh thyme, destemmed
½ cup vegetable broth
1 lb. mixed mushrooms (Alba/Brown Clamshell, Shiitake, Forest Nameko, Cremini, Velvet Pioppini, etc.), bottoms trimmed and roughly chopped
2 cloves garlic, grated
1 bunch fresh parsley, chopped
Lemon zest from 2 lemons
Salt and freshly ground pepper, to taste
Instructions
Gremolata
1. Combine the garlic, remaining olive oil (optional), parsley, and lemon zest
2. Season with salt
3. Allow this to sit while you cook the other dishes
Cauliflower mash
1. Steam chopped cauliflower for 12 minutes
2. Add steamed cauliflower and almond milk to a blender
3. Blend till it reaches a smooth consistency (be sure to pause blending, to stir and scrape the insides of the blender, a few times)
4. Transfer cauliflower mash to a pot
5. Add garlic butter, salt, and pepper
6. Stir till combined
7. Place pot on the stove, over medium-low heat
8. Add grated Romano cheese and stir till well combined
9. Remove from the heat
Vermouth mushrooms
1. Heat 2 tablespoons of olive in a large skillet, over medium heat
2. Add the shallots and cook till they are slightly translucent, roughly 2 minutes
3. Add fresh thyme, mushrooms, and salt
4. Cook until the mushrooms are softened and slightly browned, roughly 4 minutes
5. Add dry vermouth and stir to deglaze the skillet
6. Cook off the alcohol, roughly 1 minute
7. Add vegetable broth, salt, and pepper
8. Bring to a boil
9. Reduce to medium heat to reduce the liquid, roughly 10-15 minutes
10. Remove from the heat
